On Monday my wife cooked a delicious Pikes Peak Roast, and I wanted take a few minutes to tell you about it. It turned out so wonderful that I took a picture of it and put it on our website. I don't think most people realize how simple it is to prepare such a terrific meal. She cooked it on a roasting pan in the oven at 325° for a little over an hour and it was done. The meal was fabulous, and on Tuesday we had some great roast beef sandwiches. Below I've included my wife's rub recipe.
Rub
2 to 3 diced Garlic Cloves
Lemon Juice from one Lemon
2 tablespoons dried Basil Leaves
1 tablespoon dried Rosemary
1 tablespoon dried Thyme
1 teaspoon dried Marjoram Leaves
½ teaspoon Black Pepper
1 tablespoon Olive Oil
1 tablespoon Flour
Rub mixture all over thawed roast. Cover with plastic and refrigerate 1 to 4 hours. Roast in oven at 325° for 1 to 2 hours for a 3 lb. roast. Remove when thermometer registers 5° below specified temperature (Desired doneness: 145° for medium rare, 160° for medium). Cover with foil and let sit 15 minutes. The meat's temperature will rise 5° during the time it sits. You'll love it!
