Greetings from Matheson, Colorado!

 

Summer has officially arrived at the Lasater Ranch.  The pastures are green and bursting with life.  We're off to a great start, thanks to some wet snows in April and a timely inch of rain earlier this week.  In this dry, short-grass prairie of eastern Colorado, an inch of rain at the right time is like gold.  Rain equals grass, and grass means nature's best beef.

 

As the days have grown longer, so has our work load.  (I apologize for not having time to get out a newsletter last month.)  Our big job in May was weaning the calves.  It was time to take the calves off of their mothers.  As you may know, most cattle producers wean in the fall when their calves are about seven months old.  Most of our calves are born in July and August, so when we wean them in May, many of them are over nine months old, close to the age that they would naturally wean themselves from their mothers.  The weaning process is less stressful for these older, bigger calves, and as a result we rarely have any sickness.  The added benefit to weaning in May is that the calves go straight to our best grass.

 

We ended the month of May with a wonderful cattle drive.  The day after we weaned the heifer calves, we drove them by horseback about eight miles to their summer pasture.  Many of these heifers will become mother cows in the future and will be added to the herd.  It was a beautiful day, and it took us almost six hours.  When we move cattle, we let them travel at their own speed.  A wise cattleman once said, "the fastest way to work cattle is slow," and that's a philosophy we agree with.  Gentle, happy cows are easier to handle and are more productive.

 

This month, we are offering some exciting specials that are listed below, and we have also added to our website, many of our most popular cuts of beef: the Tri Tip Roast, Flat Iron Filet, Skirt Steak, Hanger Steak, and Flank Steak.  The supply for these cuts is limited, but we hope to keep them in stock for the rest of the summer.  We have also added a 35 lb. package of ground beef for only $4.15 per pound.  Also, you should take notice of our Liver special.  I grew up eating grass-fed beef.  When I was a kid, we ate liver once every two weeks, and I'm thankful that my parents realized the health benefits of organ meats and required us to eat them, and they were delicious.  Nowadays, organ meats are not as popular as they had been.  The liver is the body's main filter and that's why "conventional liver" from animals that have been treated with antibiotics, growth hormones, and pesticides, would not be healthy to consume.  As you know, our cattle are grown out on grass without these harmful toxins, so our liver is not only high in copper, zinc, iron, and fat-soluble Vitamins A and D, but is also a rich source of antioxidants, essential fatty acids, and important very-long-chain unsaturated fatty acids.
