Greetings from Matheson, Colorado!

I thought I would squeeze in this newsletter while it's still January.  I can't believe how fast this month has flown by, let alone the entire year of 2005.  I realize it's a little late to talk about New Years Resolutions.  Most resolutions have probably been broken or forgotten by now.  Personally, I've never made one, but I see the attraction of wiping the slate clean and starting over.  After all, this is a new year and it will be different.  I'll work harder.  I'll exercise more frequently.  I'll eat healthier foods.  I'll live life to the fullest???  Isn't that what we all want, a healthier, more fulfilling life? That's why many of you have chosen to make grassfed beef part of your diet.  There are many good reasons for choosing grassfed beef and I'll be going over all of those reasons in the next few months, but probably the best reason is for our health.  It's easy to understand why grassfed beef is part of a healthy diet when you think about it in simple terms.  Cattle are designed to consume grass, so when cattle are permitted to grow out naturally in open grasslands, they are healthier.  It only makes sense that our health improves when we consume meat from healthy animals.  Humans have consumed meat from grassfed animals for centuries.  You can say that we are designed to consume meat from grassfed animals.  For me, this simple logic tells me everything I need to be convinced that consuming grassfed meat is part of living a healthy, fulfilling life.  So it's not surprising to learn that experts and researchers have discovered the health benefits in specific terms.  The evidence is overwhelming and I encourage you to visit Jo Robinson's wonderful site, EatWild .  When compared to conventional beef, grassfed beef has less fat and fewer calories, and yet has more of the good things, like omega-3 fatty acids and Conjugated Linoleic Acid (the "good fats" that fight cancer and cardiovascular disease), vitamin E, and a number of antioxidants including beta-carotene.  It's not an accident that grassfed meat is part of a healhy diet.  Until fairly recently, almost all beef was grassfed and that's what we ate for centuries.
