Greetings from Matheson, Colorado!   I hope everyone had a wonderful Thanksgiving.  We are grateful for your support and your belief in sustainable agriculture.  Thanksgiving helps me remember what's really important.  It's easy to get bogged down with the little things in life that don't matter.  Recently a friend of mine from Brazil, Raphael Filippon, stayed with us for two months and helped us out on the ranch.  Everyone at the ranch had a great time with him.  One of the most enjoyable things about spending time with someone from another country is seeing and learning a new perspective on almost everything.  Raphael had an interesting phrase for my kids when they were misbehaving (when they were arguing or fighting, running and screaming, the usual for a 6 and an 8-year-old).  Instead of saying, "Settle down" or "Stop rough-housing," he would always say, "Slow down, girls."  It essentially meant the same thing, but it highlighted the problem that my girls were having - they were going too fast.   That's not a problem unique to children.  Everyone seems rushed these days, at work, at home - too many activities, too many obligations.   Just about everyone and everything needs to "slow down."  Here at Lasater Grasslands Beef, we're trying to do our part, by raising cattle the way nature intended, in large open pastures, the slow way.  It takes longer, 8 to 10 months longer than with cattle fed grain in confinement, but we're convinced it's better for the environment and better for you.  And we hope you are slowing down to enjoy the good things in life, like preparing a wonderful meal produced by sustainable practices and sitting down at the table with friends and family to share it.   Two wonderful things happened recently that I wanted to share with you.  We were awarded "Conservationist of the Year" by our local Conservation District.  We are honored to be recognized for our efforts to improve the land we are fortunate to manage.  We were also recently featured in an American Express advertisement (photo above).  So far, we have seen the advertisement in Tuesday's Wall Street Journal and yesterday's New York Times (a double page spread).  Be on the lookout for it in other major publications.   We have some incredible specials this month.  Please feel free to give us a call if we can be of any assistance.   Specials        Ribeye Steaks   Wonderfully tender and juicy, comes with four individually packaged steaks, 8-12 oz each.  On special for a limited time.
