Greetings from Matheson, Colorado!

Spring has definitely arrived in eastern Colorado. We've been incredibly warm the past week and the pastures are starting to green up. Unfortunately, we haven't had enough moisture this month, but we're hopeful that rain will be coming soon. If you've ever been around farmers and ranchers, you know we're always fretting about the weather. And it's understandable. We are essentially grass farmers. The food source for our cattle is native prairie grasses, and the two critical ingredients for raising grass are rain and sunshine. Here in the arid west, we actually measure a rain by hundredths of an inch. "How much rain do you get last night?" a neighbor might ask. "Oh, we got 56 hundredths." And the neighbor might say, "Oh yeah, we only got 27 hundredths."

Yesterday, when I was out in one of our pastures, I noticed in the distance a piece of land that was greener than the rest. So I went out to investigate. It turns out that it was an area where these little ground squirrels (about the size of chipmunk, photo above) were living. It reminded me that everything in nature has a role to play. While many ranchers don't like these little rodents because of their destructive-looking tunnels, they actually improve the production of the ground by aerating the soil.

Here at The Lasater Ranch, we don't believe it's our role to dominate the land. While nature isn't always as neat and tidy as we would like it to be, we believe nature knows best. We're proud of this philosophy, and we know it makes a difference in the unique quality of our beef. We hope you enjoy.
